Drain the chickpeas and put them in a food processor. Add all the remaining ingredients, then whiz until you get a coarse texture.
Shape 4 balls from the mixture. Slightly flatten these between your palms. If you have time, let them rest in the refrigerator for an hour or so.
Brush or spray the patties on both sides with oil, then place them on a baking tray.
Bake in a preheated oven, at 200°C for about 20-25 minutes, turning them over once.
Just before serving, cut the rolls in half, perhaps toast them, spread the lower half with mayonnaise, layer on some tomatoes & salad leaves, then add the chickpea patty. Top with the other half of the roll.
Alternatively, fill a toasted pita bread with the same serving ingredients (or other condiments of your choice).
