Chickpea burger
If you’re after an easy, healthy, vegetarian burger why don’t you try out this simple chickpea burger? It’s easy to mix together and is baked rather than fried. You can serve it with just a salad or, like a normal burger, in a roll, pita bread, tortilla wrap and so on.

- Drain the chickpeas and put them in a food processor. Add all the remaining ingredients, then whiz until you get a coarse texture.
- Shape 4 balls from the mixture. Slightly flatten these between your palms. If you have time, let them rest in the refrigerator for an hour or so.
- Brush or spray the patties on both sides with oil, then place them on a baking tray.
- Bake in a preheated oven, at 200°C for about 20-25 minutes, turning them over once.
- Just before serving, cut the rolls in half, perhaps toast them, spread the lower half with mayonnaise, layer on some tomatoes & salad leaves, then add the chickpea patty. Top with the other half of the roll.
- Alternatively, fill a toasted pita bread with the same serving ingredients (or other condiments of your choice).
