Thinly slice the cabbage.
Cut the chilli in half, remove the seeds and vein, then chop it finely. Peel the ginger and thinly slice. Chop the garlic.
Put all the ingredients (except the sesame seeds, oil and spring onions) in a large, heavy-based pan. Put the lid on then braise over medium heat for 10-15 minutes.Take the lid off and cook gently for another another 15-20 minutes until the liquid has completely evaporated.
Meanwhile, slice the spring onions diagonally and dry-fry the sesame seeds until golden. Add half of these to the cabbage, toss well.
Serve the braised cabbage with the oil drizzled over it and the remaining sesame seeds and spring onion slices scattered on the top.
