Coconut and almond oat cookies

These coconut and almond oat cookies are vegan, sugar-free and can easily be gluten-free if appropriate oat is used. So they are healthy, nutritious snacks that are perfect substitutes to normal cookies. I like munching them with my morning coffee or afternoon tea.

Ingredients
  

  • 3 medium ripe bananas
  • 3 Tbsp desiccated coconut
  • 3 Tbsp ground almond
  • 1 apple grated
  • 1.5 cup rolled oats
  • 1 Tbsp coconut oil

Method
 

  1. Mash the bananas with a fork until mushy.
  2. Add the desiccated coconut and ground almond, then combine.
  3. Add the oats then the grated apple and coconut oil. Combine into a soft dough.
  4. Let it rest until the oven warms up.
  5. Heat the oven to 180°C and line a large baking tray with parchment paper.
  6. Make equal sized balls from the mixture and flatten these slightly between your palms.
  7. Put the cookies on the baking tray and bake for about 15 minutes until golden brown.
  8. Transfer them to a wire-rack to cool.
  9. When cooled, store them in an airtight container.
