Coconut and almond oat cookies
These coconut and almond oat cookies are vegan, sugar-free and can easily be gluten-free if appropriate oat is used. So they are healthy, nutritious snacks that are perfect substitutes to normal cookies. I like munching them with my morning coffee or afternoon tea.

Method
- Mash the bananas with a fork until mushy.
- Add the desiccated coconut and ground almond, then combine.
- Add the oats then the grated apple and coconut oil. Combine into a soft dough.
- Let it rest until the oven warms up.
- Heat the oven to 180°C and line a large baking tray with parchment paper.
- Make equal sized balls from the mixture and flatten these slightly between your palms.
- Put the cookies on the baking tray and bake for about 15 minutes until golden brown.
- Transfer them to a wire-rack to cool.
- When cooled, store them in an airtight container.
