Minty green pea burgers

These vegetarianminty green pea burgerscan easily be vegan if you make them with flax-egg. For a gluten-free version use gluten-free breadcrumbs and buns (or chickpea flour for the patties). Serve them with your favourite condiments and toppings.

Ingredients
  

  • 1.5 cups frozen green peas thawed
  • 1 shallot chopped
  • 1 clove of garlic chopped
  • 1 handful mint
  • 1 egg or flax egg
  • 1 cup breadcrumbs can be gluten-free
  • 2 pinches of dried chilli flakes optional
  • Salt and pepper
  • Burger buns
  • Fillings toppings and condiments of your choice

Method
 

  1. Put the peas, shallot, garlic, egg and mint in a food processor, then until you get a coarse mixture. Transfer it to a bowl and add breadcrumbs. Season with salt & pepper and add the chilli flakes if used. Form 4 patties and cool them until you’re ready to fry them.
  2. Heat some oil in a large non-stick frying pan. Cook the patties until golden and crispy, about 4 minutes on each side.
  3. Meanwhile, cut the buns in half and toast them gently.
  4. Assemble the burgers, adding lettuce, cucumber, roasted red pepper, onion, tomato etc slices and condiments of your choice.
  5. Serve warm.
