Put the dates and walnuts in a blender and pulse until you get a crumble.
Add the oats and pulse again. Add the remaining ingredients and blend until you get a thick, slightly textured batter. Add more oat milk if it's too thick.
If you have time, rest the batter for 15 minutes.
Oil a pancake pan or a heavy-based frying pan, then add spoonfuls of batter into the pan. Flatten them into circles (you can use a pancake moulds).
Cook for a couple of minutes on each side until golden, then transfer them to a plate.
Serve warm or at room temperature with maple syrup or toppings of your choice.
