Date and walnut oat pancakes
These healthy date and walnut oat pancakes are super easy to make. They are dairy-free and gluten-free oats can also be used if preferred or needed. They are perfect for breakfast, brunch, snacks, picnics trips and so on.

Method
- Put the dates and walnuts in a blender and pulse until you get a crumble.
- Add the oats and pulse again. Add the remaining ingredients and blend until you get a thick, slightly textured batter. Add more oat milk if it’s too thick.
- If you have time, rest the batter for 15 minutes.
- Oil a pancake pan or a heavy-based frying pan, then add spoonfuls of batter into the pan. Flatten them into circles (you can use a pancake moulds).
- Cook for a couple of minutes on each side until golden, then transfer them to a plate.
- Serve warm or at room temperature with maple syrup or toppings of your choice.
