Date and walnut oat pancakes

These healthy date and walnut oat pancakes are super easy to make. They are dairy-free and gluten-free oats can also be used if preferred or needed. They are perfect for breakfast, brunch, snacks, picnics trips and so on.

Ingredients
  

  • 10 soft dates pitted
  • ½ cup walnuts kernels
  • 1 green apple peeled and grated
  • 1 cup oats gluten-free, if needed
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 eggs
  • 1 cup oat milk
  • 2 Tbsp coconut sugar or Stevia optional

Method
 

  1. Put the dates and walnuts in a blender and pulse until you get a crumble.
  2. Add the oats and pulse again. Add the remaining ingredients and blend until you get a thick, slightly textured batter. Add more oat milk if it’s too thick.
  3. If you have time, rest the batter for 15 minutes.
  4. Oil a pancake pan or a heavy-based frying pan, then add spoonfuls of batter into the pan. Flatten them into circles (you can use a pancake moulds).
  5. Cook for a couple of minutes on each side until golden, then transfer them to a plate.
  6. Serve warm or at room temperature with maple syrup or toppings of your choice.
