Guacamole

Guacamole, the avocado-based dip is well known and loved all around the world not just in Mexico or the States. These days we just buy it ready-made, despite the fact that it takes hardly any time to make our won. Here is a super simple guacamole recipe that makes a delicious dip or salad. Serve it with tortilla chips and crudités.

Ingredients
  

  • 2 ripe avocados
  • Juice of 2 limes or 1 lemon
  • 1 small ripe tomato
  • 1 chilli pepper
  • 1 shallot or ½ red onion
  • 1 handful fresh coriander
  • Salt & pepper
  • Optional: a few drops of Tabasco

Method
 

  1. Cut the avocados in half, remove the stone and scrape out the flesh into a bowl.
  2. Roughly chop the tomatoes and the onion. De-seed the chilli. Put these into a small food processor together with the coriander and add the juice of one lime and half of the avocado flesh.
  3. Whizz until you get a textured paste. Add the remaining avocado and whizz for a few seconds until the desired texture is achieved ( or use a fork to mash for a more rustic version).
  4. Taste it. Season with salt and pepper to your liking and more lime juice if needed.
  5. Serve it fresh!
