Heat the oil in a frying pan. Finely chop the onion then soften in the oil for 2-3 minutes. Add the garlic and the spices and cook for another 5 minutes on low heat, until tender.
Drain the chickpeas, add to the onion together with 1 Tbsp of water, then cook for 2-3 minutes.
Transfer it to a blender. Add the baking powder and flour then blend for a few seconds. Add the herbs, lemon zest, salt and pepper, and blend it to a rough textured paste.
Form 8 balls between your palms and put them on a plate to rest.
Fry the falafel balls in hot oil until golden brown all over.
Serve them with a salad and pita bread.
