Lightly whisk the eggs in a small bowl, then add the parsley and a couple of pinches of salt.
Remove the skin of the sausage and chop the flesh roughly.
Put the sausage pieces and chopped tomatoes in a frying pan and gently heat over medium-low heat. Stir occasionally until the sausage has released its fat and the tomatoes have softened.
Pour in the egg mixture, letting it spread out evenly.
Put a lid on and turn down the heat. Cook for about 8-10 minutes until the omelette has cooked through.
Meanwhile, slice the green pepper into thin rings.
When the omelette is ready, slide it to a plate and scatter the pepper slices on top and garnish with some parsley.
Serve warm.
