Hungarian-style omelette

I make omelette or frittata regularly for my children and this Hungarian style omelette one of is their favourites. It requires soft smoked paprika sausage, which is very similar to cooking Chorizo. You can buy pointed green peppers in Turkish supermarkets (spicy or plain ones) which add some freshness to the dish. Serve it with crusty bread.

Ingredients
  

  • 4 large eggs
  • 1 Tbsp chopped parsley
  • 75 g soft paprika sausage
  • 2 small tomatoes chopped (or 6 cherry tomatoes halved)
  • 1 pointed green pepper
  • Salt and pepper

Method
 

  1. Lightly whisk the eggs in a small bowl, then add the parsley and a couple of pinches of salt.
  2. Remove the skin of the sausage and chop the flesh roughly.
  3. Put the sausage pieces and chopped tomatoes in a frying pan and gently heat over medium-low heat. Stir occasionally until the sausage has released its fat and the tomatoes have softened.
  4. Pour in the egg mixture, letting it spread out evenly.
  5. Put a lid on and turn down the heat. Cook for about 8-10 minutes until the omelette has cooked through.
  6. Meanwhile, slice the green pepper into thin rings.
  7. When the omelette is ready, slide it to a plate and scatter the pepper slices on top and garnish with some parsley.
  8. Serve warm.
