Put the ribs and other ingredients a large pot of water, bring to the boil and cook for 30 minutes. Alternatively, use a pressure cooker - cook the ribs under pressure for 10 minutes.
Transfer the pork ribs to a plate, let them cool then wipe them with a kitchen towel.
Put all ingredients for the paste in a food processor and whiz until you get a coarse paste.
Rub the ribs with this paste, then marinate them for at least 2 hours, or even overnight.
Just before grilling season with salt.
Heat the BBQ, grill or griddle pan, then cook the ribs for 5-8 minutes until slightly charred.
Serve warm or at room temperature.
