Indian spiced pork ribs

These Indian spiced pork ribs are perfect for summer BBQ parties. The ribs are precooked and marinated so the grilling only takes a few minutes. Serve it with naan bread, rice, mango chutney and raita.

Ingredients
  

  • For the ribs:
  • 700 g pork ribs
  • 1 star anise
  • 1 bay leaf
  • 1 garlic
  • 1 piece of turmeric root
  • 1 piece of ginger
  • 5 cloves
  • For the paste:
  • 1 tsp coriander seeds toasted
  • 1 tsp cumin seeds toasted
  • 1 garlic clove chopped
  • 1 cm piece of ginger chopped
  • ½ red chilli
  • ½ tsp cinnamon
  • ½ tsp garam masala
  • ½ tsp paprika
  • 1 lime
  • 1 tomato chopped
  • 1 tsp dark sugar
  • 1 tsp oil
  • Few black peppercorns
  • To serve:
  • 1 handful coriander leaves

Method
 

  1. Put the ribs and other ingredients a large pot of water, bring to the boil and cook for 30 minutes. Alternatively, use a pressure cooker - cook the ribs under pressure for 10 minutes.
  2. Transfer the pork ribs to a plate, let them cool then wipe them with a kitchen towel.
  3. Put all ingredients for the paste in a food processor and whiz until you get a coarse paste.
  4. Rub the ribs with this paste, then marinate them for at least 2 hours, or even overnight.
  5. Just before grilling season with salt.
  6. Heat the BBQ, grill or griddle pan, then cook the ribs for 5-8 minutes until slightly charred.
  7. Serve warm or at room temperature.
