Indian spiced pork ribs
These Indian spiced pork ribs are perfect for summer BBQ parties. The ribs are precooked and marinated so the grilling only takes a few minutes. Serve it with naan bread, rice, mango chutney and raita.

- Put the ribs and other ingredients a large pot of water, bring to the boil and cook for 30 minutes. Alternatively, use a pressure cooker – cook the ribs under pressure for 10 minutes.
- Transfer the pork ribs to a plate, let them cool then wipe them with a kitchen towel.
- Put all ingredients for the paste in a food processor and whiz until you get a coarse paste.
- Rub the ribs with this paste, then marinate them for at least 2 hours, or even overnight.
- Just before grilling season with salt.
- Heat the BBQ, grill or griddle pan, then cook the ribs for 5-8 minutes until slightly charred.
- Serve warm or at room temperature.
