Instant rava idli

Idli is a traditional breakfast in south Indian households. It is a savoury cake that is popular throughout India. Usually the cakes are made by steaming a batter consisting of fermented black lentils and rice. Well, you love idlis but what if you have no batter on hand?This instant rava idli (steamed semolina cake) is a quick and equally tasty version. Since the batter requires no fermentation this recipe is a quick fix.

Ingredients
  

  • 2 cups semolina or rava
  • 1 ½ cups fresh sour yoghurt
  • 2 tsp baking soda
  • ½ cup water
  • 1 green chilli chopped
  • 1 bunch coriander leaves chopped
  • 2 carrots grated
  • Salt to taste
  • For seasoning:
  • 2 tsp oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp black lentils
  • 1 spring curry leaves chopped

Method
 

  1. In a bowl, add semolina, grated carrots, chopped coriander leaves, salt, yogurt and water. Mix well to bring it to right consistency. Make sure that the batter is not diluted or runny.
  2. Heat one table spoon oil in a small pan, add mustard seeds, cumin seeds and black lentils.
  3. When the seeds crackle, add chopped curry leaves and sauté for a minute.
  4. Pour the tampering over the semolina batter and mix well.
  5. Add baking soda and sprinkle little water over it, when the bubbles appear mix it gently.
  6. Pour 2 glasses of water in steamer and heat over medium flame. Grease idli moulds with oil.
  7. Pour spoonful of batter into greased idli moulds and steam for 8 to 10 minutes on low flame.
  8. Turn off the flame and remove moulds from steamer. When it cools down a bit, remove prepared idlis from it.
  9. Instant semolina idli is ready, serve hot with chutney of your choice.
