Instant rava idli
Idli is a traditional breakfast in south Indian households. It is a savoury cake that is popular throughout India. Usually the cakes are made by steaming a batter consisting of fermented black lentils and rice. Well, you love idlis but what if you have no batter on hand?This instant rava idli (steamed semolina cake) is a quick and equally tasty version. Since the batter requires no fermentation this recipe is a quick fix.

- In a bowl, add semolina, grated carrots, chopped coriander leaves, salt, yogurt and water. Mix well to bring it to right consistency. Make sure that the batter is not diluted or runny.
- Heat one table spoon oil in a small pan, add mustard seeds, cumin seeds and black lentils.
- When the seeds crackle, add chopped curry leaves and sauté for a minute.
- Pour the tampering over the semolina batter and mix well.
- Add baking soda and sprinkle little water over it, when the bubbles appear mix it gently.
- Pour 2 glasses of water in steamer and heat over medium flame. Grease idli moulds with oil.
- Pour spoonful of batter into greased idli moulds and steam for 8 to 10 minutes on low flame.
- Turn off the flame and remove moulds from steamer. When it cools down a bit, remove prepared idlis from it.
- Instant semolina idli is ready, serve hot with chutney of your choice.
