Preheat the oven to 180°C.
Arrange the chicken pieces in a large baking tray, rub them with oil, then season with salt and pepper.
Slightly crush the garlic (keeping the skin on) with a knife.
Scatter the garlic and thyme around the meat.
Bake for 25 minutes.
Meanwhile, discard the seeds of the chilli, then slice it into thin strips. Drain the beans.
Scatter the chilli, beans and tomatoes around the chicken. Pour over the wine, then bake for another 20 minutes or so.
When the chicken is golden brown and cooked through properly, discard the garlic skins and thyme stalks.
Serve with the lemon zest and the chopped parsley scattered on top.
