Ivy gourd (tindora) fry

Ivy gourd or tindora is a common vegetable in India. They can easily be bought from most Indian stores. It is a healthy vegetable, an antioxidant and helps control blood sugar levels. It can be prepared in many ways - this recipe is one of my own creations!

Ingredients
  

  • 500 g Ivy gourd tindora Thinly sliced
  • 2 Tbsp Coriander seeds
  • 2 Tbsp Peanuts
  • 2 Dry red chillies
  • 1 Tbsp Chana dal bengal gram dal
  • 1 Tbsp Black gram dal
  • 1 Tbsp Sesame seeds
  • ½ Onion chopped roughly
  • 2 Garlic cloves
  • 1 tsp Cumin seeds
  • 1 Tbsp Oil
  • Salt as required

Method
 

  1. Dry roast all the ingredients except ivy gourd, garlic and cumin seeds.
  2. Add the garlic and cumin seeds to the roasted ingredients and grind them together adding very little water.
  3. In a pan, heat the oil and add the thinly sliced ivy gourd and fry them until they are soft and tender.
  4. Add the above mixture and salt to it and fry until the mixture browns.
  5. Serve hot.
