Ivy gourd (tindora) fry
Ivy gourd or tindora is a common vegetable in India. They can easily be bought from most Indian stores. It is a healthy vegetable, an antioxidant and helps control blood sugar levels. It can be prepared in many ways – this recipe is one of my own creations!

Method
- Dry roast all the ingredients except ivy gourd, garlic and cumin seeds.
- Add the garlic and cumin seeds to the roasted ingredients and grind them together adding very little water.
- In a pan, heat the oil and add the thinly sliced ivy gourd and fry them until they are soft and tender.
- Add the above mixture and salt to it and fry until the mixture browns.
- Serve hot.
