Wipe the chicken clean with paper towels then prick the skin (not flesh) all over with a sharp knife.
Preheat the oven to 200°C.
Mix the marmalade, mustard, oil, garlic, ginger, salt and pepper in a large bowl. Glaze the chicken pieces with this mixture and put them into a roasting tin. Pour the leftover mixture over them.
Slice the mandarins into rounds, put most of these on top of the chicken - squeeze a few over the chicken.
Cover the tin with foil and put it in the oven for 20 minutes.
Remove the foil and roast for a further 30-40 minutes until golden brown, occasionally basting the chicken with the juices.
Scatter the parsley on top just before serving.
