Mandarin Chicken bake
If you want to cook an easy, laid back meal during the winter festivities or for Valentine’s day – try out this Mandarin Chicken bake recipe! Honestly, its’ absolutely delicious and needs very little effort! Serve it with a mash, or boiled rice and some veggies. You can also rub some five spice powder into the skin – this version would be ideal during Chinese New year!

- Wipe the chicken clean with paper towels then prick the skin (not flesh) all over with a sharp knife.
- Preheat the oven to 200°C.
- Mix the marmalade, mustard, oil, garlic, ginger, salt and pepper in a large bowl. Glaze the chicken pieces with this mixture and put them into a roasting tin. Pour the leftover mixture over them.
- Slice the mandarins into rounds, put most of these on top of the chicken – squeeze a few over the chicken.
- Cover the tin with foil and put it in the oven for 20 minutes.
- Remove the foil and roast for a further 30-40 minutes until golden brown, occasionally basting the chicken with the juices.
- Scatter the parsley on top just before serving.
