Meatballs in grilled pepper and tomato sauce

For this meatballs in grilled pepper and tomato sauce recipe you can use ready-to-cook meatballs or create your own. Just mix 450g beef with 2 tsp oregano, 2 minced garlic cloves, 1 tsp onion powder and salt & pepper, then form the mixture into small balls with your fingers. Serve the dish with pasta, rice, couscous or as tapas with bruschetta.

Ingredients
  

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 Tbsp olive oil
  • 1 tsp dried oregano or marjoram
  • 1 tsp smoked paprika
  • 200 g baby tomatoes on the vine
  • 1 Tbsp red wine vinegar
  • About 6 sun blushed tomatoes
  • Fresh parsley leaves
  • 1 tsp sugar optional

Method
 

  1. Grill or barbecue the peppers, then cut them into thin slices. This can be done well ahead.
  2. Chop the onion and garlic. Cut the tomatoes in half.
  3. Heat the oil in a frying pan and cook the meatballs, until brown, then transfer them to plate.
  4. Add more oil to the pan, if needed. Gently sauté the onion for 5 minutes, then add the garlic. Stir for a few seconds, then add the tomatoes, paprika and marjoram. Sautee for 5 minutes, then add the vinegar and deglaze the pan. Add the sugar too, if the tomatoes are not very ripe.
  5. Add a glass of water, season with salt and pepper and reduce the sauce.
  6. Add the parsley, grilled pepper slices and sun-blushed tomatoes. Warm through and serve.
