Mexican style Caesar salad

The classic Caesar salad has a Mexican twist in this recipe, so it goes really well with Tex-Mex dishes. A Mexican style Caesar salad is easy to prepare, it's zingy, spicy and absolutely delicious. Perfect for parties!

Ingredients
  

  • 1 large romaine lettuce
  • 1 handful of roasted pumpkin seeds
  • 2 sheets of tortilla
  • Grated Cotija cheese
  • Sliced grilled red chilli optional
  • Dressing:
  • 1 large bunch coriander cilantro
  • ⅓ cup of pumpkin seeds
  • 1 garlic clove
  • 2 grilled green chillies
  • 3 Tbsp grated Cotija cheese
  • 4-6 Tbsp Greek yogurt or mayonnaise
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • Salt and pepper

Method
 

  1. Dry-fry the pumpkin seeds in a pan, set aside.
  2. Grill the chillies, then remove their skin and deseed them.
  3. Remove the coriander stems, then put the leaves in a food processor with the other ingredients, except the mayonnaise (or yogurt). Set aside.
  4. Cut the tortilla into long, 1cm wide strips, then fry them in a pan until crispy.
  5. Wash and dry the lettuce leaves, then arrange them in a large serving bowl.
  6. Sprinkle the tortilla strips, toasted pumpkin seeds, chilli slices over the lettuce, then drizzle with the dressing, sprinkle with freshly ground pepper and grated cheese. Serve and enjoy!
