Mexican style Caesar salad
The classic Caesar salad has a Mexican twist in this recipe, so it goes really well with Tex-Mex dishes. A Mexican style Caesar salad is easy to prepare, it’s zingy, spicy and absolutely delicious. Perfect for parties!

- Dry-fry the pumpkin seeds in a pan, set aside.
- Grill the chillies, then remove their skin and deseed them.
- Remove the coriander stems, then put the leaves in a food processor with the other ingredients, except the mayonnaise (or yogurt). Set aside.
- Cut the tortilla into long, 1cm wide strips, then fry them in a pan until crispy.
- Wash and dry the lettuce leaves, then arrange them in a large serving bowl.
- Sprinkle the tortilla strips, toasted pumpkin seeds, chilli slices over the lettuce, then drizzle with the dressing, sprinkle with freshly ground pepper and grated cheese. Serve and enjoy!
