Scrub the potatoes with a brush to remove any dirt.
Cut the larger potatoes in half or quarter - they should be bite-sized.
Put them in a pan of cold water and bring to the boil, then simmer for 10-15 minutes until the potatoes are tender.
Meanwhile, chop the spring onions and the wild garlic leaves, then zest the lemon.
In a small frying pan heat the butter/margarine/oil and gently sauté the spring onions for 2 minutes then add the wild garlic leaves. Stir for a minute.
Drain the potatoes and put them on a platter. Add the spring onion and wild garlic butter. Season with salt and pepper, then add the lemon zest and a squeeze of lemon juice.Toss gently.
Taste, and adjust the seasoning and lemon juice. Drizzle with olive oil and serve warm.
