New potatoes with wild garlic

These new potatoes with wild garlic go superbly with most roast/fried/grilled meats during springtime, as the dish is fresh and zesty. For a vegan or vegetarian meal, just add some lentils or beans and/or some feta or plant-based cheese.

Ingredients
  

  • 450 g new potatoes
  • 2 Tbsp soft butter or margarin or olive oil
  • About 10 wild garlic leaves
  • 6 spring onions
  • Zest and juice of ½ lemon
  • Salt and pepper
  • 1 Tbsp olive oil

Method
 

  1. Scrub the potatoes with a brush to remove any dirt.
  2. Cut the larger potatoes in half or quarter – they should be bite-sized. 
  3. Put them in a pan of cold water and bring to the boil, then simmer for 10-15 minutes until the potatoes are tender.
  4. Meanwhile, chop the spring onions and the wild garlic leaves, then zest the lemon.
  5. In a small frying pan heat the butter/margarine/oil and gently sauté the spring onions for 2 minutes then add the wild garlic leaves. Stir for a minute.
  6. Drain the potatoes and put them on a platter. Add the spring onion and wild garlic butter. Season with salt and pepper, then add the lemon zest and a squeeze of lemon juice.Toss gently.
  7. Taste, and adjust the seasoning and lemon juice. Drizzle with olive oil and serve warm.
