Peanut butter banana bars

I make healthyoat and banana slicesevery week, which I have for breakfast or as midday/afternoon snack. This time I added some peanut butter and chopped peanuts to make them protein-rich. I baked them in a bread tin, which made it easier to cut them into slices. These Peanut butter banana bars don't need any added fat nor sugar -  but if you have a sweet tooth, add some sultanas/raisins/apricots to the batter.

Ingredients
  

  • 2 large or 3 small ripe bananas
  • 1 tsp cinnamon optional
  • 3 Tbsp peanut butter
  • 1 cup rolled oats
  • ½ cup peanuts
  • ½ cup dried fruits such as sultanas/raisins optional

Method
 

  1. Heat the oven to 190°C. Line a loaf or baking tin.
  2. Blend the bananas in a food processor. Add the cinnamon, peanut butter, peanuts the oats. Blitz until you get a rough textured mixture. Stir in the sultanas/raisins, if used.
  3. Transfer the mixture to the lined tin, spreading it out evenly.
  4. Bake in the middle of the oven for 20-25 minutes, until golden.
  5. Leave it to cool in the tin for 5 minutes, then transfer to a wire rack.
  6. When completely cool, cut it into bars.
  7. Store them in an airtight jar or tin.
