Pickled herring and butter bean salad

I keep pickled herring in the fridge because I can make quick and easy dishes with it. For example this pickled herring and butter bean salad is ready in just 10 minutes. Perfect for a quick and healthy lunch on a slice of toasted sourdough bread.

Ingredients
  

  • 2 rollmops Pickled herring rolls
  • 1 tin butter beans
  • 2 spring onion
  • 1 celery stick
  • ½ grilled pepper
  • 1 garlic clove minced
  • 1 Tbsp olive oil
  • Grated yest and juice of ½ lemon
  • 1 small garlic clove minces
  • Ground pepper
  • 2 Tbsp chopped parsley or dill
  • Chili if liked

Method
 

  1. Unroll the herring fillets and remove the filling. This is normally onion slices and/or gherkins.
  2. Cut the fish into small cubes or thin slices.
  3. Drain the beans and put them in a mixing bowl. Add the herring slices and the pickled onion pieces.
  4. Cut the pepper into small cubes, then thinly slice the spring onion and celery stick. Add these to the salad.
  5. Mix in the garlic, lemon zest and juice, then add the parsley. Toss well.
  6. Season generously with ground pepper and a pinch of chilli flakes, if liked.
