Pickled herring and butter bean salad
I keep pickled herring in the fridge because I can make quick and easy dishes with it. For example this pickled herring and butter bean salad is ready in just 10 minutes. Perfect for a quick and healthy lunch on a slice of toasted sourdough bread.

Method
- Unroll the herring fillets and remove the filling. This is normally onion slices and/or gherkins.
- Cut the fish into small cubes or thin slices.
- Drain the beans and put them in a mixing bowl. Add the herring slices and the pickled onion pieces.
- Cut the pepper into small cubes, then thinly slice the spring onion and celery stick. Add these to the salad.
- Mix in the garlic, lemon zest and juice, then add the parsley. Toss well.
- Season generously with ground pepper and a pinch of chilli flakes, if liked.
