Pimm's ice-lolly

Pimm's is a lovely drink during the summer - and it can be frozen too! I prefer it with tonic water instead of lemonade.  This Pimm's ice-lolly recipe is easy to create, particularly if you have a quick pop-maker.

Ingredients
  

  • 1 cup Pimm 's No 1
  • 3 cups of lemonade or tonic
  • A few strawberries
  • Cucumber
  • lemon & orange rings
  • mint leaves

Method
 

  1. Slice thinly the strawberries, cucumber, lemon or orange. If you have time, soak them in the Pimm's in a small, shallow dish (the lolly will freeze more quickly).
  2. Place one piece of cucumber and a couple of pieces of the fruits into each ice lolly mould.
  3. Mix the remaining Pimm's with the lemonade or tonic water and fill the moulds with this mixture.
  4. Add a couple of mint leaves to each mould, then gently insert the lolly stick & lid.
  5. Freeze for 2-3 hours or overnight. Alternatively use quick pop-maker to create almost instant lollies.
