Pimm’s ice-lolly
Pimm’s is a lovely drink during the summer – and it can be frozen too! I prefer it with tonic water instead of lemonade. This Pimm’s ice-lolly recipe is easy to create, particularly if you have a quick pop-maker.

Method
- Slice thinly the strawberries, cucumber, lemon or orange. If you have time, soak them in the Pimm’s in a small, shallow dish (the lolly will freeze more quickly).
- Place one piece of cucumber and a couple of pieces of the fruits into each ice lolly mould.
- Mix the remaining Pimm’s with the lemonade or tonic water and fill the moulds with this mixture.
- Add a couple of mint leaves to each mould, then gently insert the lolly stick & lid.
- Freeze for 2-3 hours or overnight. Alternatively use quick pop-maker to create almost instant lollies.
