Ingredients

  • 1 apple
  • 1 cup oats gluten-free, if needed
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • ½ tsp ground ginger
  • 1 cup oat milk approx.
  • ½ cup ground walnuts
  • ½ cup raisins or sultanas
  • 1 Tbsp chia seed mixed with 2 Tbsp water
  • Oil to cook

Method

  1. First mix together the flax egg and set aside.
  2. Peel then grate the apple. Mix the oats, baking powder, spices and oat milk, then add the grated apple.
  3. Stir in the flax-egg, then the ground nuts and raisins. Add more oat milk, if needed, until you get a thick pancake batter. If time allows rest it for 10 minutes.
  4. Lightly grease, then heat a heavy pancake pan. Add about five dollops of the batter to the pan, spreading them out into circular shapes, using the base of the spoon.
  5. Cook them for a couple of minutes, then carefully flip them over and cook for another minute or so on the other side too.
  6. Transfer the pancakes to a plate. Make further batches using up the remaining batter.
  7. Serve with toppings of your choice.
