Plant-based apple and oat pancakes
These plant-based vegan apple and oat pancakes with banana, walnuts and raisins don’t need any added sugar or oil, yet they are sweet, moist, filling and, most importantly, very tasty. Perfect for breakfast or brunch during the colder months, or just as a snack during the day.

- First mix together the flax egg and set aside.
- Peel then grate the apple. Mix the oats, baking powder, spices and oat milk, then add the grated apple.
- Stir in the flax-egg, then the ground nuts and raisins. Add more oat milk, if needed, until you get a thick pancake batter. If time allows rest it for 10 minutes.
- Lightly grease, then heat a heavy pancake pan. Add about five dollops of the batter to the pan, spreading them out into circular shapes, using the base of the spoon.
- Cook them for a couple of minutes, then carefully flip them over and cook for another minute or so on the other side too.
- Transfer the pancakes to a plate. Make further batches using up the remaining batter.
- Serve with toppings of your choice.
