Pomegranate & Walnut Panettone

January isn't the most exciting month so it's nice to try and liven it up with something easy but delicious and tasty like this Pomegranate & Walnut Panettone . A couple of years ago I put up asimple panettone recipeusing my bread machine and this one is much the same but I thought I'd try slightly different additions for a bit of variety. It was a great success if the speed with which it was gobbled up is anything to go by!

Ingredients
  

  • Initial Ingredients:
  • Yeast 1½ tsp
  • Strong White Flour 400 g
  • Sugar 4½ Tbsp
  • Salt 1 tsp
  • Butter 50g - cut into 2cm cubes
  • 2 medium Eggs - beaten
  • Milk 200 ml – warmed to room temperature
  • Additional Ingredients for later in cycle:
  • Butter 70g - cut into 2cm cubes
  • Walnuts 50g - finely chopped
  • Pomegranate seeds 50g strained if too juicy
  • Candied Orange Peel 50g - finely chopped
  • Mixed dried fruit 50 g

Method
 

  1. Add the Initial Ingredients to the bread machine pan in the order listed - unless your manual suggests otherwise.
  2. If your machine has a Brioche setting then use it, otherwise just use the basic bread setting.
  3. Machines with a Brioche cycle will probably let you know by beeping when to put in the Additional Ingredients. If yours is less sophisticated then add them about 10 minutes before the end of the first kneading cycle i.e. about 60 minutes from starting.
