Preheat the oven to 180C degrees.
Peel the potatoes, then dice them - they should be the same size as the pork, which might need to be cut into smaller pieces (as both should be bite-sized, about 2-3cm).
Lightly oil a large casserole dish. Scatter the potato & pork cubes in it, the garlic.
Cut the red pepper into chunks, tuck these between the pork and potatoes.
Season with a salt and pepper, add the pepper paste, olive oil and the white wine. Mix well.
Cover the dish with a lid or foil, then bake for about 70-90 minutes, until the meat and potatoes are tender and slightly browned. You can remove the cover for the last 15 minutes of baking.
Serve with fresh herbs scattered on top, and a crispy salad on the side.
