Portuguese pork and potato bake
Fried pork with potatoes is a popular dish in Portugal. I decided to make a baked version, as it’s easier and more healthy. You can just leave the Portuguese pork and potato bake in the oven for an hour and get on with other things, so it’s ideal for lazy weekend or busy midweek family meals.

- Preheat the oven to 180C degrees.
- Peel the potatoes, then dice them – they should be the same size as the pork, which might need to be cut into smaller pieces (as both should be bite-sized, about 2-3cm).
- Lightly oil a large casserole dish. Scatter the potato & pork cubes in it, the garlic.
- Cut the red pepper into chunks, tuck these between the pork and potatoes.
- Season with a salt and pepper, add the pepper paste, olive oil and the white wine. Mix well.
- Cover the dish with a lid or foil, then bake for about 70-90 minutes, until the meat and potatoes are tender and slightly browned. You can remove the cover for the last 15 minutes of baking.
- Serve with fresh herbs scattered on top, and a crispy salad on the side.
