Sauteed green beans and peas with ham

If you have leftover cooked or roasted ham, this recipe is a good way to use it up. This sautéed green beans and peas with ham is ideal for a quick midweek lunch or supper, served with pasta, noodles, rice or toast.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 shallot
  • 1 clove of garlic minced
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 1 cup green peas defrosted if frozen
  • 1 cup green beans trimmed
  • 2 slices of cooked/roasted ham
  • 2 Tbsp chopped parsley
  • Salt & pepper

Method
 

  1. Heat the oil a frying pan and soften the shallot for a couple of minutes. Add the garlic and cook for another minute.
  2. Add the vegetables, vinegar and a drop of water. Bring to the boil, then put the lid on, and cook for about 5 minutes over low heat. Add some water if needed.
  3. Meanwhile, cut the ham into small cubes.
  4. When the vegetables are tender, stir in the mustard and ham pieces. Season to taste.
  5. Serve with the chopped herbs scattered on top.
