Sauteed green peas with vegan feta

This delicate sautéed green peas with vegan feta is one my favourite dishes throughout the year. It’s super easy to make, zingy and yummy. I normally serve it on a piece of toast or crostini ( lightly crushed into a textured spread), but you can mix it with pasta, rice, gnocchi or serve it as a side dish with grilled fish.

Ingredients
  

  • 2 cloves of garlic
  • 1 Tbsp olive oil
  • 2 cups frozen green peas
  • Juice and zest of 1 lemon
  • Drop of white wine optional
  • 50 g vegan feta cheese
  • 1 Tbsp chopped dill
  • Salt and pepper

Method
 

  1. Thinly slice the garlic.
  2. Heat the oil in a saucepan, then add the garlic. Cook for 30 seconds, then add the peas, lemon juice and a dash of water or white wine/vermouth. Put the lid on and simmer for 5 minutes or until the peas are cooked.
  3. Turn off the heat and transfer the peas into a serving bowl. Add the dill and crumble the feta over it, then combine. Season with salt & pepper.
  4. Serve with a pinch of lemon zest scattered on the top.
