Sauteed mushroom, spinach and beans

These simple sautéed mushroom, spinach and beans is wonderful with a piece of toast on meat-free days or can be served as a side dish with grilled/fried meat such as steak. You can use other fresh herbs if you like and add some chilli to spice it up!

Ingredients
  

  • 1 Tbsp olive oil
  • ½ cup of chopped onion
  • 3 cloves garlic sliced
  • 1 cup sliced mushrooms
  • ¼ cup of white wine
  • 1 Tbsp Dijon mustard
  • 100 g baby spinach
  • 1 can mixed beans
  • 2 Tbsp chopped oregano
  • Salt and pepper

Method
 

  1. Heat the oil in a frying pan and sauté the onion until soft and glossy. Add the mushrooms and garlic and fry until brown.
  2. Pour in the wine and add the mustard. Let it bubble for 1-2 minutes.
  3. Add the spinach, simmer for 3-4 minutes under cover. When the spinach has wilted add the drained beans.
  4. Warm through, sprinkle with oregano and season with salt to taste and pepper.
  5. Serve warm.
