Shiitake and kale stir-fry

I adore shiitake mushrooms. Not only are they tasty and healthy but also so very useful and for quick and easy meals. This shiitake and kale stir-fry is ready in just 10 minutes, during which time you can cook some noodles in a separate pan - or just add some rice noodle at the end and cook for a couple of minutes as per pack’s instruction. You can serve it with rice, in a flatbread or on a piece of toast too - and I really love it with baked sweet potatoes! Perfect for a low-cal, vegan diet but leave out the sesame seeds if you're counting the calories!

Ingredients
  

  • 1 tsp vegetable oil or oil spray
  • 3-5 Shiitake mushrooms
  • 2 cloves of garlic
  • 1 Tbsp Tamari Soya sauce
  • 1 Tbsp mirin or Japanese rice vinegar
  • 2 cups of chopped curly kale
  • 1 Tbsp sesame seeds optional

Method
 

  1. Slice the mushrooms and garlic.
  2. Heat the oil in a wok or frying pan. Cook the garlic for 30 seconds then add the mushrooms. Stir-fry for 3-5 minutes until softened then add the soya sauce and mirin.
  3. Let it bubble for a few seconds then add the rinsed kale. Put a lid on, turn down the heat and let it steam for a couple of minutes.
  4. When the kale leaves have wilted, stir through the sesame seeds (if used)and serve.
