Shiitake and kale stir-fry
I adore shiitake mushrooms. Not only are they tasty and healthy but also so very useful and for quick and easy meals. This shiitake and kale stir-fry is ready in just 10 minutes, during which time you can cook some noodles in a separate pan – or just add some rice noodle at the end and cook for a couple of minutes as per pack’s instruction. You can serve it with rice, in a flatbread or on a piece of toast too – and I really love it with baked sweet potatoes! Perfect for a low-cal, vegan diet but leave out the sesame seeds if you’re counting the calories!
