Spiced apple waffles

These spiced apple waffles are perfect for breakfast. They are more healthy than normal waffles, as they are made with wholewheat flour and plant-based milk, and have no sugar. I like mine really spiced, so I added extra ginger and cinnamon, but for a mild version just use the mixed spice. Serve them with caramel sauce, maple syrup , date syrup or honey. Alternatively make some apple compote or sauce by caramelizing some chopped apple in a pan with sugar, honey or date syrup, then pour this over the waffles just before serving.

Ingredients
  

  • 1 cup self-raising wholewheat flour
  • 1 Tbsp oil
  • 1 large egg
  • ½ cup milk or other plant-based milk
  • 1 apple grated
  • 1 tsp mixed spice or more to your liking
  • ½ tsp ginger or cinnamon or both optional

Method
 

  1. Put all ingredients in a blender and whiz until you get a smooth, thick batter. Add more milk, if needed - you should get a thick, but pourable batter.
  2. Heat the waffle maker. Once it’s hot, add a ladleful of batter, let it spread out, then put the lid on. Cook the waffle following the machine's instructions - it should take about 3-5 minutes.
  3. When it’s ready - golden and crispy on the outside - remove it to a plate and keep warm.
  4. Make more waffles using up the batter (depending on your waffle maker the batter is enough for about 4 waffles).
  5. Serve the waffles with caramel sauce, maple syrup or honey.
