Spiced apple waffles
These spiced apple waffles are perfect for breakfast. They are more healthy than normal waffles, as they are made with wholewheat flour and plant-based milk, and have no sugar. I like mine really spiced, so I added extra ginger and cinnamon, but for a mild version just use the mixed spice. Serve them with caramel sauce, maple syrup , date syrup or honey. Alternatively make some apple compote or sauce by caramelizing some chopped apple in a pan with sugar, honey or date syrup, then pour this over the waffles just before serving.

- Put all ingredients in a blender and whiz until you get a smooth, thick batter. Add more milk, if needed – you should get a thick, but pourable batter.
- Heat the waffle maker. Once it’s hot, add a ladleful of batter, let it spread out, then put the lid on. Cook the waffle following the machine’s instructions – it should take about 3-5 minutes.
- When it’s ready – golden and crispy on the outside – remove it to a plate and keep warm.
- Make more waffles using up the batter (depending on your waffle maker the batter is enough for about 4 waffles).
- Serve the waffles with caramel sauce, maple syrup or honey.
