Mix the flaxseed with the water and set aside for about 15 minutes until you get a thick paste.
Drain the jackfruit and put it into a large mixing bowl, then mash it with a fork.
At the onion, garlic, the ground spices and tomato purée. Season generously with salt and pepper.
Add the chopped coriander and the rice flour then mix with your hands until you get a textured dough.
Form about eight equal sized balls from the mixture then flatten these between your palms.
Put the patties onto a lined baking sheet and bake in a hot oven for 15 to 20 minutes until golden, or fry/ griddle them in a pan over medium heat for five minutes or so, until golden.
Serve the patties warm or at room temperature.
