Spiced jackfruit patties

Jackfruit is an ideal ingredient to make vegan patties. It has a thick, almost meaty texture that lends itself to meatball or fishcake-like dishes. These spiced jackfruit patties were baked in the oven but you can fry or grill them if you prefer. You can serve them in a sandwich, flatbread, burger or with a salad and other side dishes of your choice. If you make them smaller, like small meatballs, they would be ideal as party nibbles!

Ingredients
  

  • 1 tin jackfruit in water 400g
  • 1 small red onion grated
  • 1 clove of garlic minced
  • 2 Tbsp ground flaxseed mixed with 4 Tbsp water
  • 1 tsp ground cumin
  • 1 tsp paprika or 50/50 chilli powder
  • 1 tsp ground coriander
  • 1 Tbsp tomato purée
  • Salt&pepper
  • 2 Tbsp chopped coriander
  • 2 Tbsp brown rice flour

Method
 

  1. Mix the flaxseed with the water and set aside for about 15 minutes until you get a thick paste.
  2. Drain the jackfruit and put it into a large mixing bowl, then mash it with a fork.
  3. At the onion, garlic, the ground spices and tomato purée. Season generously with salt and pepper.
  4. Add the chopped coriander and the rice flour then mix with your hands until you get a textured dough.
  5. Form about eight equal sized balls from the mixture then flatten these between your palms.
  6. Put the patties onto a lined baking sheet and bake in a hot oven for 15 to 20 minutes until golden, or fry/ griddle them in a pan over medium heat for five minutes or so, until golden.
  7. Serve the patties warm or at room temperature.
