Spiced pork medallions

For summer barbecues and all-year-round parties it always good to have a few easy yet yummy recipes. These Mexican-style spiced pork medallions are tender, zingy and delicious - perfect for these occasions as the cooking takes less than 10 minutes. You can serve them wrapped in flatbread (with salsa/crispy salad) or with a black bean salad and rice.

Ingredients
  

  • 2 pork tenderloins
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp ground pepper
  • ½ tsp smoked paprika
  • 1 tsp oregano
  • 1 pinch cinnamon
  • 1 Tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 Tbsp Fiery Chilli Heinz ketchup or 1 tsp Chipotle paste
  • 1 Tbsp ketchup or BBQ sauce
  • Salt to taste

Method
 

  1. Cut the tenderloin into 1cm thick medallions and put them into a large freezer bag or a mixing bowl.
  2. Combine the rest of the ingredients (except the salt) in a small bowl then pour over the pork.
  3. Massage the sauce into the meat, making sure that each piece gets covered well.
  4. Marinate for at least an hour (if more, put the bag/bowl in the fridge).
  5. When you’re ready to cook, take the pork out of the fridge and seasons with salt.
  6. Heat your BBQ, grill or griddle pan and cook the medallions for 3-5 minutes on each side until charred.
  7. Serve warm with condiments of your choice.
