Spiced pork medallions
For summer barbecues and all-year-round parties it always good to have a few easy yet yummy recipes. These Mexican-style spiced pork medallions are tender, zingy and delicious – perfect for these occasions as the cooking takes less than 10 minutes. You can serve them wrapped in flatbread (with salsa/crispy salad) or with a black bean salad and rice.

Method
- Cut the tenderloin into 1cm thick medallions and put them into a large freezer bag or a mixing bowl.
- Combine the rest of the ingredients (except the salt) in a small bowl then pour over the pork.
- Massage the sauce into the meat, making sure that each piece gets covered well.
- Marinate for at least an hour (if more, put the bag/bowl in the fridge).
- When you’re ready to cook, take the pork out of the fridge and seasons with salt.
- Heat your BBQ, grill or griddle pan and cook the medallions for 3-5 minutes on each side until charred.
- Serve warm with condiments of your choice.
