Soak the lentils in water overnight, then rinse.
Put them in a food processor with the spices and garlic. Season to taste, then add a little water.
If you want the pancakes to be fluffy, you can add a couple of pinches of baking powder.
Lightly oil a pancake or flat griddle plate, then add dollops of the batter, letting them spread into circular shapes. After a minute or so, turn them over and cook until golden.
Transfer them to a plate and repeat with the remaining batter.
Serve them with dips, paté, toppings and so on, spring onions scattered all over them.
