Spiced red lentil fritters

This spiced red lentil fritters recipe is similar to the Indian dosa but the batter is thicker, so it’s more suitable for nibbles or dipping rather than wrapping. If you omit the egg and make the batter thinner then you can easily make dosa.

Ingredients
  

  • 150 g red lentils
  • Water
  • 1 egg
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp ground turmeric
  • ¼ tsp chilli powder
  • 1 clove of garlic minced (optional)
  • Salt and pepper taste
  • To serve: couple of spring onions sliced (optional)

Method
 

  1. Soak the lentils in water overnight, then rinse.
  2. Put them in a food processor with the spices and garlic. Season to taste, then add a little water.
  3. If you want the pancakes to be fluffy, you can add a couple of pinches of baking powder.
  4. Lightly oil a pancake or flat griddle plate, then add dollops of the batter, letting them spread into circular shapes. After a minute or so, turn them over and cook until golden.
  5. Transfer them to a plate and repeat with the remaining batter.
  6. Serve them with dips, paté, toppings and so on, spring onions scattered all over them.
