Spicy Potato and Celeriac Soup

Celeriac is very popular in France, but in the English-speaking world it is generally unknown, overlooked and underused. This Spicy Potato and Celeriac Soup is a good way to familiarise yourself with the flavour. It's deliciously warming, filling and easy to make, also (using a pressure cooker) it can be on the table in half an hour. For calorie counters, celeriac is brilliantly low - this recipe works out at about only 23 kCal /100 gram.

Ingredients
  

  • 10 g oil spray
  • 140 g Onions
  • 3 g Garlic
  • 130 g Leeks
  • ½ tsp chilli flakes
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • 570 g Celeriac
  • 70 g Celery
  • 300 g Potatoes
  • 1 litre stock
  • To Garnish: toasted cumin seeds and if diet allows a dollop of cream

Method
 

  1. Heat the oil, gently soften the onion then the garlic & leeks.
  2. Add the spices and cook, stirring, over a low heat for a couple of minutes.
  3. Meanwhile roughly chop the vegetables then add them to the pan and stir together.
  4. Add the stock, put on the lid and bring up to pressure.
  5. Cook for 10 minutes then turn off the heat and allow to cool by itself.
